Cook time: 5 minutes 4 large microwavable mugs

Ingredients

1 cup sifted all-purpose flour
1 cup granulated sugar 
1 teaspoon baking powder 
1 egg    Seeds from half of a vanilla bean (or 1 teaspoon vanilla extract) 3/4 cup whole milk (Whole milk works best for desired thickness) 
3/4 cup vegetable or coconut oil

Tip: For a deeper lemon flavor, use 1/4 teaspoon vanilla extract and 1 tablespoon fresh lemon zest to replace the 1 teaspoon vanilla extract or the vanilla bean seeds.

Instructions

  1. Cut vanilla bean in half lengthwise, and then use a small sharp knife to scrape out the seeds.
  2. Combine all ingredients and mix until combined — do not over mix as there should be some small lumps
  3. Evenly divide between the four mugs
  4. Individually, microwave on high for 2 1/2 -3 minutes, until cake rises above the mug and it is no longer soupy
  5. Let cool for 2 minutes and decorate with desired toppings

Suggested Toppings: Cream Cheese frosting (with 2 drops any color food coloring mixed in), glaze or powdered sugar, and add freshly sliced strawberries, blue berries, mixed fruit, gummy bears, chocolate syrup, caramel drizzled or Lemon Glaze. Garnish with twirls of lemon peel.

Tip: Cakes can be made in mugs, cooled, removed from the mugs and then frozen in a to a month. Thaw and then add your favorite toppings immediately before serving.
