Ingredients

Medium to large microwavable mug or small bowl

2 to 3 large eggs
1 tablespoon diced meat (cooked bacon, cooked sausage, ham, Canadian bacon)
1 tablespoon salsa or fresh diced vegetables of your choice. 1 tablespoon of your favorite shredded cheese
Salt and pepper to taste
Olive or coconut oil (or cooking spray)

Instructions

  1. Spray the mug or coat it lightly with oil
  2. Whisk in the eggs one at a time
  3. Add meat(s) and salsa and/or veggies and salt and pepper then mix until well blended.
  4. Cook on high, in the microwave for one minute. Stir it up to break up large clumps of egg or vegetables
  5. Cook for 45 to 60 seconds, or until the eggs are slightly firm and not too much liquid in mug or bowl
  6. Add a sprinkle of cheese and enjoy

Cooking time may vary based on microwave wattage, size of mug or bowl and added ingredients. Tweak as needed. If you accidentally over cook it, just mix in a touch of milk or water to re-hydrate your meal.
